If you'd like to immerse yourself in Italian culture, this is most certainly the way to do it. We enjoyed three weeks in this wonderful apartment steeped in history but renovated to a high standard. Paula has thought of everything to make your stay comfortable and was completely accessible anytime I had the occasion to reach out to her (via WhatsApp).
The kitchen was well used during my stay. It has a gas stovetop and electric oven which work great. The cookware is adequate and utensils, although counter space is limited. There is a good-sized refrigerator, which is often not the case in European rentals. There were some herbs, salt/pepper, olive oil, and even some pasta and rice available.
The beds are comfortable and the linen nice, and plenty of clean towels. We slept super well, very quiet despite being in the center of a city.
Arriving at the end of August, the AC was most appreciated and worked quite well. After about 10 days we never used it again.
The town of Viterbo is charming and you'll find everything you need within walking distance. We loved the pace of life there... the church bells ring at 7:30 am - although not loud enough to wake you up if sleeping. Lots of nice coffee shops and eating places. Hardly heard any English spoken anywhere, which we loved.
There are so many lovely towns and thermal spring baths around Viterbo, and lots of Etruscan history there.
